Coffee Shop Up and Running

Please give a warm welcome to Pierce's new coffee shop, Brewbird Coffee. Trent and Abby Simpson proudly debuted the small coffee shop on September 5, and ever since then, it has been brimming with excitement.
The Simpson family said they wanted something for a small town, something convenient, so people would not have to drive all the way into Norfolk for a nice afternoon coffee or fun drink.
“It's been overwhelmingly very supportive. Lots of good comments about it tasting good, and that they're just happy that they have a small town coffee shop right here in town,” A. Simpson said.
The family had their eye on the lot for a while, but the tricky part was figuring out how to plan the layout of the building and create an easy way to enter and exit. Then they had to complete the entire process of picking out the menu, flavors, and all the drinks they would serve. They tried to pick drinks so that everyone would have something they like and could enjoy. The husband and wife duo picked the name Brewbird Coffee because of Pierce’s mascot, the Bluejays, and the word “brew” for coffee. The hardest part for the Simpsons was connecting the dots and trying to get everything to work together for the good of the shop and the town.
A. Simpson said she, as well as customers, have favorite drinks.
“Cookie butter has been very popular, and I'm a simple person, so probably the Golden Hour with just caramel and vanilla.”
